Medjoul flan

Preparation time: 15 minutes

Cooking time: 25 minutes

Serves 6-8 people

Ingredients  

2 Extra large Eggs

1½ Cups sugar

2 Cups flour

1 Cup butter (or margarine)

1 Tsp. soda

½ Tsp. baking powder

¼ Tsp. butter – flavored Extract

1 Tsp. butter – flavored Extract

½ Tsp. rum Extract

1 Tsp. vanilla

½ Cup apple juice

½ Cup milk

225g Medjoul dates (pitted, sliced in half lengthwise)

Directions  

  1. Combine all ingredients except dates.
  2. Beat with electric mixer until smooth.
  3. Spread batter evenly in greased jelly roll pan.
  4. Arrange date slices in rows or in an attractive manner.
  5. Pat lightly into batter.
  6. Bake at 350 degrees for 20-25 minutes, or until it tests done.
  7. Cool on rack.  Dust lightly with sifted confectioners' sugar, if desired.
  8. Cut into desired sized pieces.
  9. Yields one jelly roll pan sized flan.
  10. Flavor will be enhanced if covered with plastic wrap and let age a day or so.
