Directions
- Combine dates and water, cool to room temperature.
- Cream shortening and sugar till light.
- Add eggs and beat till smooth.
- Add dry ingredients alternately with date mixture to the creamed mixture.
- Beat just to combine.
- Add nuts.
- Fill muffin cups half full.
- Bake in 375 degree oven for 18-20 minutes.
- Cool and sprinkle with powdered sugar.
