Date pancakes

Preparation time: 10 Minutes

Cooking time: 15 Minutes

Makes 12—14

Ingredients 

110 g. Plain Flour

a pinch of  salt

2 Large eggs

200 ml. Milk mixed together with 75 ml. water

2 Tablespoons melted butter

3 Date pieces, chopped

A Little extra butter for cooking the pancakes

Directions 

  1. Sieve the flour and salt into a large mixing bowl.
  2. Make a well in the centre of the flour and break the two eggs into it. Start to whisk the eggs, beginning to incorporate bits of flour from around the edges as you do so.
  3. Then start to add small quantities of the milk-and-water mixture gradually, until all lumps disappear, and the batter is smooth.
  4. When you’re ready to cook the pancakes, add the 2 tablespoons of melted butter to the batter and stir it in.
  5. Coat the pan with butter, and make sure the pan is hot. Once the pan is hot, turn down the heat to medium, then pour the batter in the pan,, swirl so the base is evenly coated. Sprinkle the chopped dates on the pancake.  Once the pancake is cooked, turn over and cook on the other side.
  6. Serve with syrup or honey. Enjoy !
