Date nut bread

Preparation time: 20 Minutes

Cooking time: 45 Minutes

Serves 8-10 people

Ingredients  

1 Cup dates

1 Tsp. soda

¾ Cup boiling water

1 Egg (separated)

¾Cup light Brown sugar

1 Tsp. vanilla

1½  Cups flour

1 Tsp. baking powder

1 Tsp. Salt

½ Cup walnuts (chopped)

 

Directions  

  1. Sprinkle dates with soda, pour the boiling water over the mixture and let stand until cool.
  2. Break egg yolk into a bowl, beat, add sugar gradually, and vanilla.  Combine with date mixture.
  3. Sift into mixture the flour, baking powder and salt, and mix in.Do not beat.
  4. Pour into greased 8 x 4 x 3 loaf tin.  Bake about 45 minutes in moderate oven (350 degrees).
  5. Better when one day old.
  6. Keep covered.
