Chicken with lentils, dates and rice

Serves 6 people

Ingredients  

4 (Boneless, skinless) half chicken breasts
2 Tbsp vegetable oil
1 Medium chopped onion
2 Cups )reduced sodium) chicken broth
1 Cup lentils
1/2 Cup chopped dates
1/2 Cup (long grain) white rice
1/2 Cup diced red peppers
1/2 Cup diced carrots
2 Cloves garlic (minced)
1/2 Tsp grated lemon peel
1/2 Tsp ground cumin
1/2 Tsp curry powder
1 Tbsp chopped parsley
 

Directions

  1. Brown chicken breasts in 1 Tbsp oil in a large, heavy saucepan over medium heat.
  2. Remove chicken and reserve. Add remaining 1 Tbsp oil to pan; stir in onions.
  3. Cook, stirring frequently, until onions are golden brown, approximately 15 minutes.
  4. Stir in remaining ingredients, except parsley and chicken breasts.
  5. Bring to a boil; cover and simmer 15 minutes.
  6. Arrange chicken breasts on top of lentil mixture; cover and simmer another 8-10 minutes, until chicken breasts are cooked through and lentils are tender.
  7. Sprinkle with parsley and serve.
