Apple & date cobbler

Preparation time: 20 minutes

Cooking time: 25 minutes

Serves 6 people

 

Ingredients

2 Bramley apples, peeled and finely diced


75g Dates, roughly chopped


½ Tsp ground cinnamon


1 Tsp mixed spice


Knob of butter


125g golden caster sugar



The cobbler

50g Butter, melted


250g Plain flour


4 Tsp golden caster sugar


2 Tsp baking powder


1 Tsp bicarbonate of soda


1 Tsp salt


240ml Buttermilk


Single or double cream, to serve

Preparation

  1. Preheat the oven to 200°C, gas mark 6. Toss together the apples, dates, sugar, cinnamon and mixed spice. Butter six ramekins and spoon in the fruit mixture.
  2. For the cobbler: Stir together the flour, sugar, baking powder, bicarbonate of soda and salt. In a separate bowl stir together the butter and buttermilk then mix into the dry ingredients to make a sticky dough.
  3. Drop spoonfuls of the dough onto the fruit then bake for 25 minutes until the crust is golden and the fruit is tender. Serve warm with cream.
