Hony date muffins

Preparation time: 15 minutes

Cooking time: 20 minutes

Makes 24 muffins

Ingredients  

1 Cup butter or margarine (9 softened)

1 cup Honey

4 Eggs (beaten)

2 Tbsp. Baking powder

dash of salt

4 Cups plus 4 Tbsp. Whole wheat flour

1½ Cups Milk

2 Cups walnuts or pecans (chopped)

3 Cups dates (chopped)

Directions 

  1. Cream butter, add honey, then eggs.
  2. Sift together baking powder, salt and four cups of flour.
  3. Add milk alternately with the flour mixture.
  4. Mix nuts and fruit with the four tablespoons of flour.
  5. Fold into batter.  Fill muffin tins three-fourths full.
  6. Bake 20  minutes at 429 degrees
