Date coleslaw with orange-ginger vinaigrette

Ingredients 

The bright flavors of carrots matched with warm spices like cinnamon, cumin, coriander and paprika make a wonderful salad for any time of year. It's a perfect make-ahead dish to take to dinner parties, as the flavors are best if left to blend for an hour before serving.

 

1  Cup pitted dates

1/2  Tablespoon grated orange zest

1/2  Cup orange Juice

3  Tablespoons white wine or cider vinegar

2  Cloves minced garlic

1  Teaspoon ground Ginger

1  Teaspoon sdalt

1/2  Teaspoon pepper

2 tablespoons Olive Oil

7 Cups  Green And Red Cabbage -- coarsely shredded

1 Cup   Carrot -- coarsely shredded

1 Cup Green Onion -- thinly sliced

Directions

 1 - Coarsely chop the dates in 1/2-inch pieces; set aside.

 2 - To make the dressing: whisk together the zest, the juice, wine or vinegar,

       garlic, ginger and the salt and pepper. Next, whisk in the oil.

 3 -  Combine the vegetables with the dressing.
